I just HATE deep frying. It makes everything (EVERYTHING!) smell like oil. And that's actually kind of sickening to me.

Beignets
Ever since beignets from Jazz Kitchen at Downtown Disney, the boy and I have been making beignets. I'm not sure if this is the easiest/tastiest/bestest recipe out there... the boy found it; we made it; it worked. While not quite the same as Jazz Kitchen, its pretty good!

Were they worth it enough to share the recipe? I only get to indulge in beignets when my mother somehow attains a box of Cafe du Monde beignet mix. Since we live on the west coast, that is only once ever couple of years. The only recipe for beignets I have found (granted, I haven't looked very hard) from the Joy of Cooking, made beignets that tasted more like funnel cake. Disappointing. Yours look just like the real thing though!
>>> this recipe isn't too bad! Its a bit more dense than what I had at the restaurant. But that could easily come from working the dough too much, or whatever can cause that. I'd love to try getting some beignet MIX though!
