Beignets

Ever since beignets from Jazz Kitchen at Downtown Disney, the boy and I have been making beignets. I'm not sure if this is the easiest/tastiest/bestest recipe out there... the boy found it; we made it; it worked. While not quite the same as Jazz Kitchen, its pretty good!




I just HATE deep frying. It makes everything (EVERYTHING!) smell like oil. And that's actually kind of sickening to me.

Were they worth it enough to share the recipe? I only get to indulge in beignets when my mother somehow attains a box of Cafe du Monde beignet mix. Since we live on the west coast, that is only once ever couple of years. The only recipe for beignets I have found (granted, I haven't looked very hard) from the Joy of Cooking, made beignets that tasted more like funnel cake. Disappointing. Yours look just like the real thing though!
