the new year!

yay? I've been pretty blah this year about the holidays... so I didn't venture out to do anything "fun" to ring in the new year.

But one nice thing with the new year... is a day off!

So I did some baking... :)


Ultimate Triple-Chocolate Bars (Betty Crocker)
12 oz semisweet chocolate chips
6oz cream cheese
2/3C evaporated milk
2C pancake mix
2/4C Sugar
1/2C Baking Cocoa
2/4C Butter, softened
1C White Baking Chips
additional 6oz semisweet chocolate chips to top

Heat 12oz chocolate chips, cream cheese, and milk over low heat until melted and smooth.
In medium bowl, mix pancake mix, sugar and cocoa. Cut in butter using pastry blender or crisscross 2 knives until mixture is crumbly. (I used my hands).
Press half the crumb mixture on the bottom of ungreasted 9x13 pan.
Sprinkle with white baking chips.

Spoon chocolate mixture over crumb crust and chips. Spread evenly.

Sprinkle with remaining crumb mixture and 6oz chocolate chips.
Press lightly with fork.


Bake in (preheated) oven at 375 for 30-35 minutes.
Cool completely, then refrigerate until chilled. Store covered in fridge.

Notes: Not an overall amazing recipe... not as sweet as i would like for something with so much chocolate. Maybe if I use sweetened cocoa powder instead? I probably won't make this again...

These sound and look so incredible! I guess looks are deceiving sometimes. I was 'blah' for the holiday(s) too.

Well, it sure looks good. Interesting that it uses pancake mix.
